Seven Sundays began with a simple idea at a Minneapolis farmers market in 2011: real food starts with real ingredients and real relationships. What began as a bootstrapped muesli business—powered by a bicycle, a borrowed kitchen, and a belief in doing things differently—grew steadily until 2020, when Seven Sundays launched its first traditional cereal made from upcycled sunflower protein made from sunflowers primarily from Minnesota. Today, the Minneapolis-based breakfast brand and Certified B Corp is dedicated to restoring the lost connection of our broken food system and changing the landscape of the Midwest.

By building direct relationships with growers and choosing a wider variety of nutrient-dense ingredients, like buckwheat and sunflowers, Seven Sundays is demonstrating what a more resilient food system can look like. The company has also embraced upcycling: partnering with farmers and processors to identify and repurpose underutilized ingredient streams, including oat and sunflower protein, helping those nutritious ingredients reach their full potential while reducing food waste. In 2025 alone, Seven Sundays upcycled 3.5 million pounds of ingredients into products such as Sunflower Protein Cereal and Protein Oats. Their products are packaged in colorful, resealable bags made from 30 to 50 percent post-consumer recycled materials, and Seven Sundays provides customers with the option to recycle packaging through Ridwell.
In forwarding the mission and increasing the sophistication of impact measurements, Seven Sundays determined to collaborate with ClimateHound to measure their carbon footprint, and develop goals to reduce it. “With this analysis, we affirmed how our ingredients are grown remains critically important to our emissions and associated opportunities to draw down carbon,” says Emily Lafferty, the Director of Mission and Sourcing at Seven Sundays. “ClimateHound is an effective, collaborative partner in our building of a practical climate action plan aligned with our company-wide commitments, identifying where we can have the greatest impact through operational opportunities as a high-growth, mission-centered food company.”
